I'm late reviewing this recipe. My friends know that is a signature attribute of mine but I'd like to think I'm the type that knows what I can or can't be late to. At first, I was disappointed with myself because I wanted this to be a weekly thing but then I decided to give myself grace and I hope you can too. Life got heavy and cooking felt more of a chore than an outlet. I'm back, regardless, a little bit lighter and a little bit wiser.
I kept it simple and wanted to use ingredients I already had to inspire the next recipe I wanted to try. Can someone please tell me what year it was that sweet potatoes suddenly became trendy? Who decides food trends? Can I join their club? It seemed to me that once sweet potatoes were served in fry form it no longer was strictly a Thanksgiving starch. What if sweet potatoes could be a breakfast thing?
I had shredded, blanched, and frozen a couple sweet potatoes a while back and wanted to put them to good use. It had never occurred to me to attempt a sweet potato hash brown before but I could see the potential. After searching for the least complicated but flavorful recipe, I decided on this one. The named seemed promising enough and I had already done the hard prep beforehand.
This recipe was straight forward but here is a tip, don't attempt to change the cooking method. After having my hash brown patties fall apart in the skillet, I understood why the creator made them in the oven. I had cute patties...I really really did guys. Mine turned into slashed hash and suddenly I felt like I was making a grinder-style sweet potato. Even though the shape of the side dish fell through on my end the flavor was on point. I loved how different it was and really switched up my usual brunch. The sweet and spicy elements paired well together and I figured why not add the richness of an egg on top (do it!).
I think classic rustic hash browns have had their moment and it is time for this to be a new breakfast staple. From the in-her-feels breakfast lover to A Spicy Perspective bravo!
